India has 29 states and thousands of culinary traditions spanning 5,000 years of civilization. Our founders understood that a single dish could carry within it the entire story of a region, a season, a family — and they built Gaylord to honor that truth.

Every spice is sourced from its native land. Every recipe is tested against the memory of how it should taste — not just how it's convenient to make. Our tandoor has been burning continuously since opening day. Some things shouldn't change.
